Our wines are naturally made, without any addition of yeasts, nutrients, enzymes, sugar, acid, or water. We use basket presses, always move the wine with gravity and favor fermentation and aging in wood vessels of various sizes. We add small amounts of sulfur, typically less than 10 ppm, as the wines are racked for bottling.
